TASTING NOTES
Deep ruby in color, this wine exudes an exquisite allure with its captivating and profound hue. Its intense and complex aromas encompass a rich tapestry of predominantly ripe red fruits, including succulent strawberries, black fruits, luscious gooseberries, and plums. The palate experience is a harmonious symphony, offering a round and luscious mouthfeel gracefully accompanied by supple tannins.
Delicately interwoven within are notes of balsamic and resin, lending an additional layer of sophistication. The wine achieves a flawless equilibrium with its perfectly balanced acidity, enhancing its overall appeal. The wine concludes with an elegant and lingering finish leaving behind a trail of flavors that gracefully dance on the senses

50% Tinta Roriz, 40% Touriga Nacional, 10% Touriga Franca

SERVING TEMPERATURE
Should be served between 14oC – 16oC

WINEMAKING
The vinification process takes place meticulously during the third and fourth weeks of September, utilizing state-of-the-art inox fermentation vats with a remarkable capacity of 12 tonnes, allowing for precise control over temperature parameters. In adherence to the winery’s unwavering dedication to quality, each grape variety was vinified separately, allowing for the individual expression of their unique characteristics.
The fermentation process spanned over a duration of 10 days, carefully maintained at a controlled temperature of 28oC, promoting optimal extraction of flavors and aromas. Subsequently, a meticulous post-fermentative maceration period of 5 days further enhanced the wine’s depth and complexity.
With utmost care, the wine was then transferred to small volume vats, ensuring meticulous preservation of its distinct qualities and facilitating the delicate aging process.

MATURATION
After the alcoholic fermentation, the wine aged in new barrels for 12 months. The wine is stabilized, followed by the bottling and subsequent ageing in bottle for 12 months.

STORAGE
For optimal enjoyment, it is recommended to consume Eden do Sol DOC Red upon release, as it is meticulously bottled for immediate drinking. However, should you choose to embark on a journey of patience, this exceptional wine unveils an admirable aging potential of more than 2 to 3 years.
To safeguard its integrity and preserve its exquisite qualities, it is imperative to store the bottle horizontally in a cool and dry environment, shielded from direct light. By adhering to these storage guidelines, you ensure that Eden do Sol DOC Red continues to evolve gracefully, enhancing its complexity and allowing its flavors to mature harmoniously over time.
