WINEMAKING
The vinification process takes place meticulously during the third and fourth weeks of September, utilizing state-of-the-art inox fermentation vats with a remarkable capacity of 12 tonnes, allowing for precise control over temperature parameters. In adherence to the winery's unwavering dedication to quality, each grape variety was vinified separately, allowing for the individual expression of their unique characteristics. The fermentation process spanned over a duration of 10 days, carefully maintained at a controlled temperature of 28oC, promoting optimal extraction of flavors and aromas. Subsequently, a meticulous post-fermentative maceration period of 5 days further enhanced the wine's depth and complexity. With utmost care, the wine was then transferred to small volume vats, ensuring meticulous preservation of its distinct qualities and facilitating the delicate aging process.

MATURATION
After the alcoholic fermentation, the wine aged in new barrels for 12 months. The wine is stabilized, followed by the bottling and subsequent ageing in bottle for 12 months.

For optimal enjoyment, it is recommended to consume Eden do Sol DOC Red upon release, as it is meticulously bottled for immediate drinking. However, should you choose to embark on a journey of patience, this exceptional wine unveils an admirable aging potential of more than 2 to 3 years.

WINEMAKING
